Cappadocia – one of the most fascinating places I’ve been to. I couldn’t believe my eyes when I first saw this geological oddity of honeycombed hills and towering boulders of otherworldly beauty. Its fantastical topography is matched by the human history. It lies in central Anatolia, in the heartland of what is now Turkey. People have long utilised the region’s soft stone, seeking shelter underground and leaving the countryside scattered with fascinating troglodyte-style architecture.

Add chopped chicken, let it get brown. Add a tin of tomatoes, let it simmer. Add Italian herbs, salt, pepper to taste. Simmer. Best served with whole meal pasta, a bottle of red or white wine. Enjoy your meal!
